How to put green beans in a jar for the winter? Everything is very simple, we don't even need to go through the list of ingredients.
I recommend fideluta beans, green or yellow. They are very tender and cook quickly. After washing them, we break off the tops and tails. To make the job go faster, we can make a bunch of beans placed end to end and "cut" them all at once. We put them in such bunches on a tray.
We prepare a few large 720 ml jars. There is no need to sterilize them beforehand. We put bunches of beans in them, nicely placed. A jar holds approximately 330 g of beans, not very tightly packed. This means that for each large jar you should count on about 380 maximum 400 g of unprocessed beans.
Add a teaspoon of salt to each jar. This means about 8-10 grams. It can be iodized or non-iodized salt.
Then fill the jars with boiling water, not cold. Screw the lids on WELL. Always use new lids, without any deformation or defects. If the lid is even slightly loose, the preserves will not last over the winter.
Immediately place the jars in a large pot with a towel on the bottom and fill the pot with still hot water, so that it covers the jars almost to the lid.
From the moment the water boils, boil for 60 minutes. Then cover the pot with a lid and a thick blanket and let the jars cool completely, there in the water. This step of letting the jars cool in the water bath is just as important as the 60 minutes of boiling.
Then the jars can be stored in the pantry. If you want, you can also put green beans in the freezer. There is no need to blanch the beans before freezing. You can put them in raw. If you can, vacuum seal them beforehand, this way they will last much longer, and will keep their aroma and taste intact.
