Recipe:

Serves 4

1 whole chicken (4-5 pounds)
Pam cooking spray
Kosher salt to taste
Fresh cracked pepper to taste
Italian seasoning to taste
Garlic powder to taste
Onion powder to taste

POTATOES
6 medium russet potatoes
½ stick butter (cut into 1 tablespoon slices)
whole milk
salt and pepper to taste

GRAVY
Pan drippings from chicken
2 cups potato water
1 cup cold water mixed with 2 ½ tablespoons corn starch
Salt and pepper to taste

1. rinse the chicken in cold water and pat dry with a paper towel. Spray lightly with the cooking spray and season to taste with the salt – onion powder. Place uncovered in a preheated 350 degree over for 20 minutes per pound. Use an instant read meat thermometer to check the thickest part of the breast is 170 degrees. Set aside to rest for 20 minutes before carving.
2. Halfway through the timing on the chicken baking, peel the potatoes and dice into 2-inch pieces. Place the diced potatoes into a large pot and fill with cold water to until just covered. Add 1 tablespoon salt to the water. Place over high heat until boiling. Lower the heat to medium and cook until tender; about 8-10 minutes. Reserve 2 cups of the potato water and set aside. Drain the remaining water from the potatoes. Add the butter and 1 teaspoon each salt and pepper. Use an electric beater to mash the potatoes, add the whole milk a little at a time until creamy. Taste for additional salt. Cover and set aside.
3. Remove the chicken from the roasting pan and place on a carving board. Let it rest 20 minutes before carving. Place the metal roasting pan on a burner and turn heat to high. Add the 2 cups potato water and bring to a simmer. Use a whisk to break any brown bits from the bottom of the pan. Bring to a rolling boil for 2 minutes. Add the corn starch to the water and stir well. Add ½ cup of the water / corn starch to the pan and whisk until it thickens. If you want the gravy thicker, add a little more of the cornstarch / water mixture. Season to taste with salt and pepper.
