Menu inspiration with Beef + Lamb Ambassador Chef Cameron Davies from The Fat Duck in Te Anau. Cameron created a dish using ANZCO Foods lamb shoulder which he used in three different ways. His final dish was a mouth-watering showcase of the versatility of lamb shoulder and featured braised terrine, lamb bacon, grilled lamb shoulder fillet, watercress gnocchi, spring carrots, goat’s cheese, green pea pesto & brown butter crumb.
