Chicken salad is a salad dish with chicken as the main ingredient. Other common ingredients include mayonnaise, boiled egg, celery, shallots, pepper, pickles and various mustards. In the United States, "chicken salad" refers to a particular salad or chicken, or salad mix consisting primarily of minced chicken and a spread, such as mayonnaise or salad dressing. Like tuna salad and egg salad, it can be served over lettuce, tomato, avocado, or some other combination. It can also be used for sandwiches. Usually made with leftover chicken or canned chicken. It may also refer to a garden salad with fried chicken, grilled chicken, or grilled chicken (usually cut or diced) on top. In Europe and Asia, salads can be complemented with any number of dressings, or none at all, and elements of meat can vary from traditional leaves and vegetables, to pasta, couscous, noodles or rice. American-style chicken salad was first served by Town Meats in Wakefield, Rhode Island, in 1863. The original owner, Liam Gray, mixed the leftover chicken with mayonnaise, tarragon and wine. It became such a popular dish that the meat market was turned into a delicatessen / shop.
