Easy, No Bake Tiramisu

The Ravishing Mrs. Ritter and Bella were craving some Tiramisu for dessert tonight. This is an easy, no bake recipe that only gets better the longer it cools in the refrigerator. I used store bought ladyfingers as I was short on time (which made it even easier).
Ingredients:
I used an 8" x 10" serving dish
1/4 cup cocoa powder
1 cup brewed espresso (or regular coffee...or decaf!)
1 tablespoon vanilla extract
5 egg yolks, chilled
1/2 cup sugar
1/4 teaspoon kosher salt
16 ounces Mascarpone cheese, chilled
1 3/4 cups heavy whipping cream, chilled
Ladyfinger cookies. Look for the hard ones. Need enough to make 2 layers in your dish (I needed about 38 for my dish).

Directions:
1. Whisk cocoa powder, espresso, and vanilla, in a bowl and set aside.
2. In a large bowl using a hand mixer, beat the egg yolks with the sugar until pale and thick (about 5 minutes). Add the salt and Mascarpone and whip until thick and smooth (about another 5 minutes). Add the chilled cream and whip until light, creamy smooth, and holds a soft peak (you guessed it....about another 5 minutes).
3. Dunk each Ladyfinger in the espresso mix and line your dish with the cookies. Cover the layer with 1/2 the Mascarpone mix using the back of a spoon to smooth the layer. Add another layer of soaked cookies and cover with the remaining Mascarpone.
4. Dust the top with cocoa powder. Cover with plastic wrap and refrigerate for at least 2 hours. The longer it chills, the more liquid the Ladyfingers will absorb and the softer they will be.
Tips:
All the ingredients for the Mascarpone mix must be cold. Don't pull them out of the refrigerator until you're ready to mix.
No espresso? Use coffee.
Coffee makes you jumpy? Use decaf!
Be careful not to over-soak the Ladyfingers. You're just looking to dip them for 1-2 seconds.
