Found this recipe and have been saving it for when I had time. This is super simple and delicious over pasta. Next time I make this I'm going to add some lemon zest for a little bit of acid. That will truly put this already delicious dish over the top.
Ingredients:
1 1/2 cups heavy whipping cream
2 cups chopped spinach
1/2 cup sun dried tomatoes, diced
1 tomato, diced
4 cloves garlic, diced fine
1 1/2 pounds chicken thighs (about 6)
salt/pepper to taste
1 Tablespoon paprika
6 Tablespoons salted butter
1 cup grated parmesan cheese
Zest from one lemon (didn't use in this video)
Directions:
1. In a 12" iron skillet, add cream, spinach, diced tomato and sun dried tomato, lemon zest, and garlic. Mix together.
2. Season chicken with salt, pepper, and paprika. Add thighs to skillet and nestle into the cream sauce.
3. Add a pat of butter over each piece of chicken, then coat each piece of chicken with the parmesan cheese.
4. Put skillet into a 375F oven and cook for 25 minutes. Turn on the broiler and cook an additional 5 minutes (check often to make sure it doesn't burn). Cook a total of 30 minutes.
Serve over pasta.
