Benjamin surprised me with a visit home and he decided to make some of his family-famous Steamed Pork Dumplings. This were juicy and very tasty along with a delicious dipping sauce.
Ingredients, Dumplings:
1 pound ground pork (chicken or turkey also works)
6-7 shiitake mushrooms, chopped
4 cloves garlic, minced
1-2 tablespoons grated ginger
5-6 green onions, chopped
2 tablespoons fish sauce
2 tablespoons soy sauce
1/2 teaspoon white pepper
1 egg
1 pack wonton wrappers
Layered bamboo steamer
Dipping sauce:
1/4 cup soy sauce
1 tablespoon fish sauce
2 teaspoons sugar
1 teaspoon sesame oil
Juice from 1 lime
cayenne pepper or sliced thai chilis to taste
Directions:
1. In a large bowl, add and mix together all the dumpling ingredients together. Add a small spoonful of the filling to the middle of a wonton wrapper and fold the ends up towards the middle.
2. Coat the parchment paper with a thin layer of oil to keep the dumplings from sticking. Steam for 10-12 minutes.
