In Ranma 1/2 by Rumiko Takahashi (author of Inuyasha and Urusei Yatsura), Ranma Saotome is "cursed" with the body of a woman whenever he gets splashed with cold water, turning back into a guy with hot water. If only the Cursed Springs of Jusenkyo were real!
This anime was the very first time I encountered the idea of changing oneself so dramatically, and it had a huge impact on me. It's not exactly the progressive representation the LGBTQ+ needs, but it's still a great example of non-cis characters doing kinda queer things.
