1 packet of instant yeast (10 grams) (0.0220lb)

About 6 cups of flour, less a finger
1.5 teaspoons of salt

1 egg yolk
1 tablespoon of yogurt (36 grams) (0.0794lb)

Instructions:
Pour 2.5 cups of warm water into a mixing bowl.
Add 1 packet of instant yeast and 1 teaspoon of sugar and mix.
First, add 3 cups of flour.
Add about 1.5 teaspoons of salt.
Continue mixing by gradually adding the flour.
Once the dough gathers, continue kneading by hand, adding flour little by little.
Achieve a soft dough that sticks to the hand. Use about 6 cups of flour in total.
Knead the dough well (about 5-6 minutes).
Gather the dough, cover it, and let it ferment in a warm place for about 40 minutes.
After the dough has risen, sprinkle some flour on the counter and take out the dough.
Gently flour the dough, divide it into two equal parts.
Roll each piece and cover them lightly with flour, then cover with a plastic bag. Let them rest for 15 minutes.
Line two baking trays with parchment paper and sprinkle some breadcrumbs on them.
Place the rested doughs on the trays.
In a separate bowl, mix 1 egg yolk and 1 tablespoon of yogurt.
Brush this mixture over the doughs.
Press on the doughs with your fingers to shape the pita. If you want it thinner and crispier, you can spread it out more.
Shape the other piece of dough in the same way and give it the fingerprint pattern.
