In a small skillet, add a drop of cooking oil and crumble over the feta cheese, followed by crunchy chili oil.
Allow the feta cheese to sizzle and sauté over a medium heat for a couple of minutes so the cheese can melt some. Gently crack the egg in the center of the pan. Season the egg with salt and pepper and allow it to cook to your liking (whether that's medium or with a runny yolk).
Toast a slice of your favorite bread (I prefer sourdough, of course!). While bread is hot, slather it with some butter, then top with the cooked egg and feta, and garnish with chopped green onion.
