black peppercorns
hot chili pepper
coriander

Made a brine, mixed: salt, sugar, black peppercorns, hot chili pepper, coriander and poured everything with water

Sent the brisket in brine for 3 days

Before smoking, dried the brisket, left it for several hours in fresh air

At the bottom of the smokehouse he poured wood chips, placed a tray for fat on top, then laid the brisket on the wire rack. Left to smoke on the fire for 50 minutes
