This is a unique recipe I came up with after much trial and error. This is 'freezer food' basically, as the tacos cook up better after they are frozen. Also, these tacos are vegan! (except if you use the avocado sauce or the cheese sauce, then they are vegetarian)
Recipe and Directions:

Makes about 30 -35 tacos.
Filling:
4 oz. Black Beans (Dry)
8 oz. Tofu (Extra Firm)
½ TBS. Cornstarch
1 Teasp. Salt
½ TBS. Cumin Powder
½ TBS. Worcestershire Sauce ( or Soy Sauce)
½ Teasp. Baking Soda
Soak beans in water with 1 TBS. Salt. Soak for 1 - 2 hours, or overnight.
Rinse the beans and top with about 2 inches of fresh water. Add baking soda.
Baking soda will make the beans soften much faster.
Bring beans to a boil, then reduce temperature and simmer for 1 - 2 hours, or until beans are tender.
Crush tofu and add Cornstarch, Salt, Cumin Powder, and Worcestershire Sauce. Once mixed, spread out tofu mixture on a baking sheet lined with parchment paper.
Bake at 350° until tofu has some toughness, but do not over cook!
When cool, mix beans and tofu and cover and set aside.
Tortillas:
200 g. / 7 oz. / @2 cups Masa Flour
170 g. / 6 oz. Pure Beet Juice
170 g. / 6 oz. Water
7g. / 2 Teasp. Salt
3 g. / 1 Teasp. Cayenne (or double that for hot tacos)
Zest of 1 Lime.
Mix dry ingredients, then heat liquid in the microwave for a minute, and add hot liquid to the flour. Mix by hand when it is cool enough. Set aside and cover for 30 minutes.
Cook the tortillas on a hot, dry pan, and put them in a towel to steam until you are ready to make up the tacos.
Dipping Sauces:
Avocado Cream Sauce:
1 Avocado
Juice of ½ Lemon
About 2 TBS. Plain Yogurt
Handful of Cilantro
Salt to taste.
Blend everything on high and garnish with some torn cilantro leaves.
Nacho Cheese Jalapeño Sauce:
1 Teasp. Cornstarch
Salt (to taste)
½ Teasp. Mustard Powder
½ Teasp. Turmeric
½ Teasp. Sugar
2 oz. Cream Cheese
½ Cup Milk (whole)
1 Jalapeño
Mix dry ingredients. Over a low flame, heat cream cheese and milk. Just when the milk is simmering, add dry ingredients. Then add cheese and stir in well. Garnish with paprika.
Fresh Roasted Salsa:
4 Tomatoes
¼ Yellow Onion
1 Jalapeño
few cloves of Garlic
Salt (to taste)
Bunch Cilantro
Roast everything in a 350° oven for one hour. Remove tomato skins and paper from the garlic. Add everything to blender and also add cilantro and salt. Blend well and garnish with torn cilantro.
