TRADITIONAL FALAFEL - ingredients
1 pound (about 2 cups) dry chickpeas/garbanzo beans - you must start with dry, do NOT substitute canned, they will not work!
1 small onion, roughly chopped
1/4 cup chopped fresh parsley
1/4 cup chopped fresh coriander
3 cloves garlic
1 tsp salt
2 tsp cumin
2 tsp ground coriander
1 tsp black pepper
1 tsp cayenne pepper
Vegetable oil for frying (grapeseed, canola, and peanut oil work well)
GIANT FALAFEL CUPCAKE (or 12 cupcakes) - ingredients
2 pound (about 4 cups) Canned Chickpeas
2 onion
1 cup chopped fresh parsley
1 cup chopped fresh coriander
6 cloves garlic
2 tsp salt
4 tsp cumin
4 tsp ground coriander
2 tsp black pepper
2 tsp cayenne pepper
2 cups of self raising flour
4 eggs
1 tsp baking powder
AVOCADO HUMMUS
1 (15 oz) can chick peas, well drained
2 medium ripe avocados, cored and peeled (13 oz before cored and peeled)
3 Tbsp olive oil, plus more for serving if desired
1 1/2 Tbsp tahini
3 Tbsp fresh lime juice
1 clove garlic, peeled
Salt and freshly ground black pepper
1/8 tsp cumin
1 - 2 Tbsp finely chopped cilantro leaves, for topping
Red pepper flakes, for topping
Directions
Pulse chick peas, olive oil, tahini, lime juice, and garlic in a food processor until smooth, about 2 minutes. Season with salt and pepper to taste (I did a scant 1/2 tsp salt and about 1/8 tsp pepper), add cumin and avocados and pulse mixture until smooth and creamy, about 1 - 2 minutes longer.
Serve topped with more olive oil if desired and sprinkle with cilantro and red pepper flakes. Serve with pita chips or tortilla chips.
