Harvest a deer this year and now your wife isn't excited about dinners? Give this recipe a try. It is a family favorite in the Four Lazy J household. Of coarse it is using the best cut of meat on the deer in my opinion. I have been using my cast iron skillet a lot lately after watching Casey Lavere from Hushin cook elk steaks in his. I watched a YouTube video to learn how to season and clean a cast iron skillet and haven't looked back. There are allegedly health benefits but I am in it for the flavor! So we start with some fresh green beans, wash them in cold water thoroughly and chop both ends off. Then we add them to a bowl and add butter, garlic salt, and ground pepper. Up next we get one of my personal favorite vegetables, the sweet potato. We peel it and slice it into small discs. Then we put them in a bowl with a little olive oil, garlic salt, and ground pepper and mix. We then take a foil lined cookie sheet and lay them out then put them in the oven at 450 degrees for around 20 minutes. Follow that with your venison tenderloin or back strap. I use to always over do it with marinades and seasoning while trying to hide the venison flavor and it always ruined it. FAIL! Now I keep my seasonings real simple with salt and pepper. I preheat my cast iron skillet on a medium heat and just before I am ready to start cooking, I add a little olive oil to it then put the steaks in. It usually only takes 2 to 3 minutes on each side and only flip it once. Let rest for just a few minutes and you're ready to serve. A nice glass of Pinot Noir pairs great with this dinner or your favorite Merlot works too! Give this a shot, it is sure to be a hit! Thanks for watching!
