Patatas bravas is a simple dish of potatoes in a spicy tomato sauce. My preferred patatas bravas recipe uses baby potatoes with the skins left on.

Ingredients

500 g (1 lb) potatoes (see notes below)
400 g (14 oz) tomato passata
3 garlic cloves, chopped
4 tbsp olive oil
1 tbsp vinegar
1 tsp paprika
Hot sauce to taste (see notes)
Salt


Instructions

Boil the potatoes in salted water for 10-15 minutes until tender. Drain.
Fry the potatoes gently in 2 tbsp of the oil to crispen up the outside.
Place the potatoes in a dish and pour on the hot tomato sauce.

For the tomato sauce

Fry the garlic in 2 tbsp of the oil for 30 seconds.
Add the passata, vinegar, paprika and your chosen hot sauce. Season with salt then mix well.
Simmer the sauce gently for around 10 minutes and allow it to thicken.

Titli's Tips
I like to use small potatoes for this dish and leave the skins on. If you wish to use larger potatoes make sure you use a good waxy potato which will keep its shape during cooking. You can peel the potatoes or not, but do cut them into 2-3 cm (1") cubes.

Instead of passata you can use a can of chopped tomatoes. Seive the sauce once it's cooked to remove pips and skin then reheat.

To make the sauce spicy you can add proprietary sauces like Tabasco or Frank's Hot Sauce. Chili powder can be used too but never quite seems to give as good a flavour. On the subject of flavour, patatas bravas are tastier when you use smoked paprika!
