This simple and delicious combinations of chicken, potato and peanut butter is enhanced by red peppers and sugar-snap peas. It makes a superb supper!
Ingredients
400 g (14 oz) chicken breast, cubed
2 large waxy potatoes, peeled and cubed
1 onion, sliced
1 red bell pepper, sliced
50 g (2 oz) sugar-snap peas
2 cloves of garlic, crushed
4 tbsp crunchy peanut butter
1 tbsp vegetable oil
1 tsp paprika
1 stock cube
Dash of soy sauce
Instructions
Heat the oil in a pan over a medium heat and stir-fry the onion for about 2 minutes.
Add the chicken breast and stir-fry until the meat starts to brown.
Add the garlic and potatoes. Stir-fry for a further 3-4 minutes.
Add the paprika, peanut butter and enough water to just cover the meat and potatoes (about 2 cups).
Crumble in the stock cube. Add the pepper and sugar-snap peas. Bring to the boil.
Add the soy sauce then cover and simmer for about 20 minutes until the potatoes are tender. Serve.
