SMOTHERED GRREN BEANS WITH POTATOES is a classic Southern soul food side dish and it's what we are cooking today. This is a simple 30 minute meal that is packed with flavor. SMOTHERED GREEN BEANS WITH POTATOES
nonstick spray
3 - 4 slices applewood smoked bacon
1 Tbsp unsalted butter (optional)
1 large onion, chopped
2 large cloves garlic, crushed & chopped
1 large Russet potato, peeled & diced into 1-inch cubes (see NOTES)
1 1/2 - 2 pounds fresh (or unthawed frozen) green beans, trimmed
1/4 - 1/3 cup chicken broth
1 tsp Creole seasoning
1/2 tsp salt
1/3 tsp granulated garlic
1/4 tsp freshly ground black pepper
1/4 tsp red pepper flakes

1. Place a large pot over medium heat. Spray it with nonstick spray. Add bacon. Cook until bacon is slightly crispy, 5 - 8 minutes. Remove bacon and drain on paper towels. Chop into large bacon bits. Set aside.
2. Add butter. Reduce heat to medium-low. Add onions. Cook until translucent, about 5 minutes. As onions cook, scrape drippings from the bottom of the pot. Add garlic. Cook, while stirring 1 minute. Add potatoes. Cook and continue scraping drippings from pot, 3 minutes. Add green beans. Combine. Pour in chicken broth. Combine while scraping bottom of pot. Stir in dried spices until all ingredients are coated.
3. Cover pot and cook until potatoes are fork tender, 15 minutes. Stir every 5 minutes while potatoes are cooking. Return bacon to pot. Cook uncovered for 5 minutes. Stir and serve.

NOTES
1. The recipe calls for cooking dish with one Russet potato. However, in this video I am using potatoes that were grown in my home garden. I used enough to equal the same amount as using one Russet potato.
