HOMEMADE BREAKFAST SAUSAGE PATTIES
2 Tbsp brown sugar (or maple syrup)
2 tsp ground sage
1 1/2 tsp granulated garlic
1 1/2 tsp ground nutmeg
1 tsp salt (or 1/2 tsp salt + 1/2 tsp Creole seasoning)
1/4 tsp freshly ground black pepper
1/4 tsp cayenne pepper
1 pound (16- ounces) ground pork
1 - 2 large cloves garlic, minced
2 - 2 1/2 tsp dried fennel seeds
3/4 tsp red pepper flakes (optional)
nonstick spray
olive oil, to coat skillet

1. In a dry skillet over medium-low heat add brown sugar (see NOTES), sage, granulated garlic, nutmeg, salt (or mixture of salt + Creole seasoning), black pepper and cayenne pepper. Toast while stirring until fragrant, 1 - 2 minutes. Remove from heat.
2. In a food processor add ground pork, toasted spices & minced garlic. Process on high speed, 30 - 45 seconds. Transfer to a large bowl. Add fennel seeds and red pepper flakes (optional). Fully combine.
3. Divide sausage mixture in half and shape each half into a log. Wrap logs in plastic wrap and refrigerate until chilled or overnight.
4. When ready to cook: Unwrap sausage logs and slice into equal-sized patties. If needed, reshape them. Over medium-high heat, spray a skillet with nonstick spray and coat it with olive oil. Fry sausage patties until cooked through (160°F), 5 - 7 minutes per side. Transfer sausages to a paper towel lined plate and serve with breakfast or brunch.

NOTES
1. If substituting maple syrup for brown sugar add syrup to the food processor in step 2 after adding in the ground pork.

We enjoy these pork sausage patties because they are savory and easy to make. They are homemade so these sausages do not have any preservatives. In addition, since these are sausage patties and not link sausages, you do not need a casing. Make these simple homemade breakfast sausage patties today.
