SAVORY MEDITERRANEAN AROMATIC CHICKEN
1/8 - 1/2 tsp sugar (or substitute)
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground allspice
zest from 1/2 a lemon
6 chicken thighs, skinned & fat removed
juice from 1/2 a lemon
nonstick spray
olive oil, enough to coat pan
1 onion, chopped
3 - 4 large cloves garlic, roughly chopped
1/2 cup dry white wine
14-ounce can diced tomatoes
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/4 - 1/3 cup chicken broth (optional)
12-ounce jar artichoke hearts, drained & cut in half vertically
kalamata olives, to taste
fresh basil, chopped, for garnish
1. Add sugar, cinnamon, cloves, allspice and lemon zest to a dry, small skillet over medium-low heat. Toast while stirring until fragrant, 1 - 2 minutes. DO NOT BURN! Remove from heat and set aside.
2. Rub chicken with lemon juice. Place a shallow cast-iron casserole over medium heat. Spray it with nonstick spray and coat it with olive oil. Add onion. Cook until translucent, 3 - 5 minutes. Add garlic and cook 1 minute. Add chicken thighs and cook until browned on all sides, 8 - 10 minutes. Remove chicken and set aside.
3. Pour in wine and add tomatoes, including juice. Stir in toasted spices, salt and pepper. Simmer. Add chicken back to casserole pan. Cover casserole with a lid and simmer 45 minutes to 1 hour, turning chicken halfway through. If the broth has reduced too much (when checking at the halfway mark), add chicken broth.
4. Add artichokes and olives to casserole 15 minutes before the end of cooking. Serve while hot garnishing with fresh, chopped basil.
One of my favorite things about cooking this chicken recipe is that its aroma fills the entire room. Toasting the dry spices adds to the depth of flavors in this chicken dish. This one pot meal takes the hassle out of making dinner and is sure to please. In addition, the cleanup is a breeze.
