Ingredients:
3 Sheets Nori Paper
1 1/2 C. Cooked White Rice, Cooled
Salmon Mixture:
1 Lb. Salmon
2 Tbsp. Sesame Oil
1 Tbsp. Soy Sauce
1 Tbsp. Honey
2 Scallions
1/2 Tsp Each: garlic powder, cumin powder, paprika, dried oregano
Salt to taste
Spicy Mayo:
1/4 C. Mayo
2 Tsp. Sriracha Sauce
1 Tsp. Honey
Toppings:
1 Avocado
2 Tsp. Black Sesame Seeds/Seed Mixture
Instructions:
1. Preheat oven to 400 F.
2. Remove the skin from salmon fillet & cut into small cubes.
3. In a bowl, combine cubed salmon with the “salmon mixture” ingredients listed above.
4. In a separate dish, make the sauce by mixing together the mayo, sriracha & honey.
5. Next, thinly slice the scallions.
6. Using a pair of scissors, cut nori sheets into 4 equal squares.
7. To each nori square, add about 1 heaping tbsp. of rice & spread out slightly. Transfer the square to your muffin slot, pushing down gently to center the rice in the middle with the edges coming up along the sides of the slot. Repeat with the rest of the nori squares. Place several salmon cubes inside each nori cup.
8. Transfer the pan to your oven & bake for 15-17 minutes. Broil, if needed, at the end to get a little tan on the salmon (1-2 minutes most).
9. While the sushi cups are baking, cut the avocado into small cubes.
10. Remove pan from the oven, allow to cool slightly & top with avocado cubes, seed mixture & a drizzle of spicy mayo.
I didn’t realize how delicious these would turn-out! This recipe has become our new family favorite. It’s also great for social gatherings but be sure to make lots because they will disappear very quickly! 😊
I realized that regular, cooked white rice works just as well as the special rice mixture used in sushi restaurants & this muffin tin version cuts down on prep time without the need to roll & cut the sushi.
