Ingredients for Main Dish Toppings:
1 Bag Tortilla/Corn Chips
1 Lb. Ground Beef
35 g. Packet Taco Seasoning
1 Round Onion
1 Tomato
1/2 C. Cilantro
2 Stems Green Onion
1 C. Sour Cream
2-3 C. Shredded Cheese
1/2 C. Sliced Green Olives
Cooking Oil for Pan
Ingredients for Guacamole:
2 Ripe Avocados
4 Garlic Cloves
1/2 C. Cilantro
1/2 Lime
1/2 tsp. Salt
1/2 tsp. pepper
Instructions:
1. Preheat oven to 400F.
2. Prepare toppings/ingredients: Chop the onion into small cubes, cut green onions into thin slices, finely chop the cilantro, cut tomato into small cubes & set aside.
3. Make the Guacamole: In a food processor, combine avocados, garlic cloves, half of the chopped cilantro, the juice of half a lime, salt, pepper & blend into a smooth mixture.
4. Coat the bottom of a frying pan with oil & sauté the onions over high heat for 5 minutes. Next, add the ground beef & cook until the color turns brown. Add the packet of taco seasoning & give it a good stir. Remove from heat & let cool for several minutes while preparing the sheet pan.
5. Line the bottom of a flat baking sheet with parchment paper/ Line up tortilla chips in a single layer, slightly overlapping. Sprinkle an even layer of shredded cheese over the chips. Add an even layer of the ground beef mixture then sliced green olives, green onion, tomato bits, and finish with another generous layer of shredded cheese.
6. Bake in preheated oven for 10-15 minutes until all the cheese has melted.
7. Remove from the oven & immediately add small dollops of prepared guacamole, sour cream & a sprinkling of the remaining chopped cilantro. Enjoy warm! 😊
