Easy microwave potato chips✨

▪️1 Russet Potato▪️Olive Oil▪️Salt▪️Parchment Paper▪️

1️⃣ Slice the potato very thin (option to use a mandoline slicer to make this super easy.. I used the 1.5 mm setting) and coat with olive oil on both sides
2️⃣ Line a plate with parchment paper and brush on some oil, add the potatoes in one layer (they should not be touching), brush lightly with oil on top and sprinkle with salt
3️⃣ Microwave for 5-7 minutes or until potatoes are slightly browned and cripsy (cooking time will depend on the thickness of the potatoes.. you may have to remove some from the plate and continue cooking the rest if they cook at diff rates); repeat until all chips are cooked and enjoy!
