▪️2 Russet Potatoes▪️Olive Oil▪️Kosher Salt & Pepper▪️1/4 of a Medium Yellow Onion, diced small▪️1 x 14 oz. Can Baked Beans▪️2 Tbsp Butter▪️3/4 Cup Shredded Cheddar Cheese▪️1 Scallion, sliced▪️
🌱Vegan Modification: Leave out the butter and sub in plant based cheese for cheddar
1️⃣ Preheat the oven to 400F.
2️⃣ Place the potatoes on a baking sheet and pierce each with a fork in a few places. Drizzle with olive oil (rub to coat the potatoes evenly) and season with salt and pepper.
3️⃣ Bake for 1 hour, up to 1 hour 15 mins, until the potatoes are tender when squeezed.
4️⃣ In a small pot preheated over medium high heat, add 1 Tbsp olive oil along with the onions. Sauté until the onions are translucent and starting to become tender (3-4 mins), then add the baked beans. Cook the beans with the onions, stirring often, until they are warmed through (3-4 mins) then turn off the heat.
5️⃣ Slice the potatoes and fan them open so the inside is exposed. Add 1 Tbsp butter in each and mix with the potato. Add a generous amount of baked beans on each (it’s okay if they overflow a bit), followed by a generous sprinkle of shredded cheddar cheese.
6️⃣ Broil in the oven for 3-5 minutes (watch closely while you broil because things can burn easily) until cheese is melty and golden brown. Top with scallions and enjoy!
