Bhindi Masala Recipe:
Serves 4-5 people

Ingredients :-
Okra(Bhindi)- 350g
Oil- 3 tablespoon
Panch phoron/mustard seeds- 1 tsp
Asafoetida(Hing) - ¼ tsp
Onion-1 medium size (finely chopped)
Ginger garlic paste- 1 tbsp
Green Chili- 1-2 (chopped)
Tomato- 3 medium size (chopped)
Turmeric powder -1 tsp
Red chili powder -1 tsp
Coriander powder- 1 tbsp
Cumin powder (Jeera powder)-1 tsp
Salt- 1 ½ tsp(as per taste)
Garam masala-1 tsp
Kasoori methi- ½ tbsp
Curd(beaten)-⅓ cup
Water- ½ cup
Coriander leaves- 2 tbsp (chopped)
Procedure:
Wash and dry the okra(bhindi). Cut the okras (bhindi) into pieces that are 1 inch wide. Heat up a pan, add 1 tbsp of oil and saute your okra (bhindi) for 2 to 3 minutes.Take them out of your pan and keep it aside. Heat up the rest of the oil in the same pan and add panch phoron. Sauté it. Add asafoetida(hing) and sauté for a while. Now, add the chopped onion and cook until golden brown. Add the chopped green chili (optional as it depends on your spice preference) and mix well. Add the ginger garlic paste and mix it well too. Add your chopped tomatoes, salt (as per taste), red chili powder, turmeric powder, and cook for 5 minutes on medium flame while stirring it occasionally. Add garam masala powder, beaten curd, fenugreek leaves and continuously mix it on low flame (if not it might split and spoil the whole texture and taste). Add a little water and mix well. As the gravy boils, add the fried okra(Bhindi), coriander leaves and mix well. Now cover and cook for 2 minutes. Turn off the stove. Our bhindi masala is ready😄.
