A delicious recipe for a spinach and goat cheese pie with Saint-Maure-de-Touraine, one of my favorite French goat cheese. 🧀🌿

Shortcrust Pastry
400 g flour
200 g French butter 🧈
2 eggs 🥚🥚
6 cl water (or more depending on the texture of the dough) 💧
10 g salt 🧂
Spinach and Goat Cheese Pie
500 g fresh spinach 🌱
50 g butter 🧈
2 shallots, finely chopped
2 eggs 🥚🥚
100 g fresh goat cheese 🧀
100 g crème fraîche
1 handful of chopped marjoram
1 log of Sainte-Maure-de-Touraine goat cheese 🧀
Salt 🧂
Pepper
Egg yolk 🥚
Baking time: for 45 minutes at 180°C or 350 °F. 🕒
