A lot of folks say you should reverse-sear a steak in an oven or grill set to around 225 °F to 250 °F. But what if I told you that the temperature your grill gauge is measuring is a lie and that there are three hidden steps in reverse-searing that almost no one notices? Sounds like b.s., right?
