Mexican Migas (Eggs, Chorizo, Fried Tortilla)
Looking for an easy and delicious breakfast idea, these Mexican Migas are sure to please. Migas in Spanish means “Crumbs” and uses day old toasted corn tortilla strips to add a crunchy savory flavor to traditional scrambled eggs. The sautéed chorizo sausage makes this dish a wonderful alternative to your weekend breakfast. Perfect for brunch too!

INGREDIENTS
2 tbsp butter
1 dozen eggs
1 lb fresh chorizo
6 corn tortillas
1 tbsp vegetable oil
PREPARATION
1. Brown chorizo over medium heat, once browned, set aside in separate bowl lined with paper towel
2. Whisk eggs until well blended
3. Melt butter in non-stick pan over medium low heat
4. Add eggs to pan
5. With a spatula, stir egg mixture constantly, being sure it doesn’t stick to pan
6. Once eggs are firm but still have a creamy and moist texture they are ready to combine with chorizo
7. Cut corn tortillas into 1 inch pieces
8. In a non-stick skillet, warm oil over medium heat, add tortillas and cook until golden and crispy.
9. Combine eggs, chorizo and tortillas in serving bowl, season to taste
