Authentic Spanish Tortilla (from my wife, a Spaniard from Valladolid)
Ingredients (for a 24cm diameter pan):
850g waxy potatoes (weighed with skin) / 700g peeled
1/2 large onion
12g salt
Olive oil or sunflower oil (in Spain, only olive oil is used)
Eggs: 5 large or 6 medium (approximately 1 medium egg per 140g potatoes)
