Pork Chops | Never Eat Another Dry Chop Again

Hello Journeymen, Apprentices and BBQ Enthusiasts! I'm back at the pit and bound and determined to help you never dry out your pork chops again! This recipe will have you smoking the juiciest pork chop ever. Believe me, before now, I was always hesitant cooking a pork chop. It didn't matter if I smoked it, oven baked it, grilled it, etc...It always, always turned out dry. That is until I really starting working on the proper technique. Since this was a fairly short smoke (One hour) I decided to use my ‪@yodersmokers‬ YS640 pellet smoker. My Yoder never disappoints!

Now it's your turn, let me make you a believer! Try this recipe:
Ingredients:
Bone-in Pork Chop ( I picked one that was about two inches thick and approximately 2lbs)
Mustard or Your Binder of Choice

Cracked Pepper
@South Chicago Packing Tallow or Butter of choice

Recipe:
Preheat your smoker to 275 degrees
Rub your pork chop with your binder of choice.
Season with Q-Rub gently pressing the seasoning into the meat
Finish off with cracked pepper
Smoke your pork chop until it reaches an internal temperature of 135 degrees (approx: one hour)
Let pork chop rest while butter or tallow preheats in a cast iron (five minutes or so)
Sear your pork chop on both sides until it reaches an internal temperature of 145 degrees
ENJOY!

Super easy, super delicious! I encourage you to try this recipe, it's well worth it. Don't get me wrong, I love my hearty cuts of steak but I will definitely consider pork chops more often now.
