Lemon, Blueberry and almond 'teacake'
(makes 12x)
cake butter
190g unsalted butter, at room temperature, cubed , plus extra for greasing
190g caster sugar
1 tsp finely grated zest of 1 lemon
4 Large eggs
190g. ground almonds
45g. plain flour, plus extra for dusting
1/4 tsp baking powder
1/8 tsp salt
60g lemon juice
100g blueberries, plus an extra 70g to garnish
icing
160g icing sugar
35ml lemon juice
