Homemade Charcuterie 100% Chicken Breast
Super easy to make! It only takes 10 minutes to prepare.
In a food processor, combine 600 grams of chicken or turkey breast and your choice of seasonings. I used salt, pepper, garlic powder, dried parsley, sweet paprika, smoked paprika, and chili powder.
Add an egg to bind everything together and blend for 20 seconds at speed 8.
You'll get a mixture that you should place on a sheet of plastic wrap and shape into a log.
Once you have your log, take a second sheet of plastic wrap and add your choice of spices. I used roast chicken seasoning and placed my log on top before tying it closed.
Place in a sheet of aluminum foil and steam for 35 minutes at Varoma temperature.
At the end of the cooking time, let it cool to room temperature before refrigerating for at least 2 hours. Enjoy!
Here, I used a slicer, but you can of course use a knife to slice your charcuterie.
You can keep your charcuterie for 10 days if you vacuum-seal it.
