UDATE 8/9/2025 - After replacing a billion voltage regulators through warranty I opted to swap to a GM 3 Wire alternator so I could keep the charge light functionality. You can see that video here - • 1981 Toyota Pickup SR5 22R GM 3 Wire Trail... which I think is a way better option.
I went through 5 regulators via warranty, then recently I swapped 5 of them in the O'Reilly's parking lot which all literally smoked upon install. This truck is my daily driver and I have a new job in a few weeks and I didn't have time to deal with this.

Below is a link to a google doc which gives detailed notes on how I discovered my voltage regulator maybe causing my over charging issue.
If replacing the regulator fixes the issue I will update the description and post a comment to confirm.

I can confirm the Haynes Toyota Pickup 1979-1995 Manual had an accurate Schematic in the back of the manual, at least for my specific year, model, region.
UPDATE: Regulator was the issue.
