I thought I would make something different this time. This is a really tasty and delicious peas and rice recipe.
I use whole grain rice and parsley for a healthy choice. You can add your favorite options.
Get a glass of wine, some music and let's get cooking.
INGREDIENTS
2 1/2 cup whole grain rice
2 cup mixed beans (soaked or canned)
1/4 cup yellow split peas
3 lbs chicken, cut into medium pieces
Salt (3 tsp for beans and 3 tsp for rice)
1/4 Chopped onions
4 Chopped garlic cloves
Chopped parsley (6-8 sticks)
1/4 cup chopped spinach
5 tbsp coconut milk
1 tsp Black Pepper
4 tbsp vegetable oil
4 tbsp casreep or any soy sauce
1 tsp Paprika
2 tsp Garlic powder, optional.
INSTRUCTIONS
Rice and split peas:
Boil rice and split peas, add 3 tsp salt and 1 tsp oil for about half hour (if you are using whole grain rice). For other rice, boil as per usual.
Strain and set aside
Beans:
Pressure cook beans and 3 tsp salt for 12 minutes. Boil beans with salt until tender. You can also use canned beans.
Strain and set aside.
Chicken:
Season chicken with salt, paprika, garlic powder, black pepper, casreep or soy sauce.
Cook until tender, put aside.
Putting everything together:
In large pot or wok put vegetable oil, coconut milk, garlic, onions to fry for 1 minute.
Add chopped spinach and cook for 1 minute
Add cooked chicken, mix for 1-2 minutes on low heat
Add rice with yellow peas, mix gently
Add cooked beans, mix gently
Add parsley, mix well until well blended.
SERVE
Excellent choice for lunch or dinner with your favorite salad and a nice glass of wine.
