Candied Wild Violets
Some hints:
1) Do not harvest flowers covered with dew
2) Do not dry them in an oven because you would make the fragrance evaporate
3) The flowers you pick do not last!
Violets preserved this way will keep almost indefinitely and as long as they are stored in a dark, cool and dry place. After one year they start loosing their fragrance.
Use them therefore only immediately before serving to garnish sweets and desserts which normally tend to be rather humid.
