The operation of rolling into a dough pancake in dough-forming machines of all designs is carried out in the same way - with the help of one or two pairs of rollers with counter-rotation. Wrapping the rolled dough into a roll is carried out in four ways: using a flexible apron with a load suspended above the conveyor belt, along which the rolled dough moves; armored mesh or pendants made of metal bars installed above the conveyor belt; two endless conveyor belts with opposite movement and with the help of a corrugated roller mounted above the carrier drum.
The final processing of the dough piece and giving it the shape of a loaf is carried out on drum, single-tape or two-tape working bodies.
