How to make easy cheesy rice cakes
Ingredients and recipe:
Crack 2 eggs into a bowl
Add 1/2 tsp salt and 1/4 tsp black pepper
Mix well
Add about 2 tbs mozzarella cheese
Mix well
Add 2 cups of cooked rice
Combine ingredients well.
Medium-low heat
Pour about 2 tbs oil into a pan
Scoop portions of the rice into the pan
Fry for 4-5 minutes on medium-low heat
Flip over and fry for another 3-4 minutes
Sprinkle with cheese
Top with a sauce if desired. I used a ketchup/hot sauce combination.
