Lobster Ragu Sauce
Ingredients:
1 lobster
1/4 cup olive oil
3-4 cloves of garlic (crushed)
42 oz. cans of crushed tomatoes
3 tbsp tomato paste
3/4 cup of wine
2 cups of clam juice
2 bay leaves
salt
black pepper
1+ cup of water
1/2 tsp of hot pepper flakes
Directions:
Cut the lobster into pieces. Crack the claws and split the interior part of the tails. Cut the body in halves.
Heat up the olive oil in a large pot. Add crushed garlic and bay leaves to the olive oil. When golden brown remove the garlic pieces and bay leaves from the pot and save them for later. Add the lobster pieces to the pot and sauté them until the lobster turns red.
When all the pieces are red, remove them from the pot and set them aside. After this, add white wine to the pot, and let it sizzle.
When the sizzling dies down add the canned tomato. Let it boil for approximately ten minutes, then add tomato paste. Let it continue to boil. When it begins to thicken, return the lobster, garlic and bay leaves to the pot. Cook for 5 -7 minutes and stir occasionally. Add the clam juice. There should be enough liquid to cover the lobster. If more liquid is needed, add more water or clam juice. Add salt and pepper. Let it cook for 40 min.
While the sauce is cooking, cook 1 lb. of bucatini (spaghetti).
Add some sauce to the bucatini and mix it well.
