This great Southern dish sent from Ann McLeod is reportedly named after Queen Jezebel. It's got some good, low key heat paired with the sweetness provided by the peach preserves. This is super easy to put together!
Ingredients:
1 red onion thinly sliced (I used 2 for more "oniony" flavor)
1 cup peach preserves
1 tablespoon horseradish
1 tablespoon stone ground mustard (I used whole grain)
1/4 cup water (use more for more sauce)
1 lemon juiced and zested (set zest aside for garnish later)
1 teaspoon kosher or sea salt
1/2 teaspoon black pepper
2 chicken breasts butterflied and halved (I used 5 chicken breast filets)
Directions:
1. Toss all into a crockpot and cook on low 6-8 hours.
2. Top with lemon zest when done and serve with rice.
