Makgeolli, sometimes anglicized to makkoli, is a Korean alcoholic beverage. The milky, off-white, and lightly sparkling rice wine has a slight viscosity that tastes slightly sweet, tangy, bitter, and astringent. Chalky sediment gives it a cloudy appearance.
Ingredients
Rice 1kg
Glutinous Rice 1kg
Nuruk(fermentation starter) 500g
Dry yeast 5g
Water A 3.8L
Water B 3.6L
*You can use 2kg of regular rice or 2kg of glutinous rice but mixing it half half preferred.
*Water A is used for fermentation and Water B is used to dilute.
Overall Process
1. Make dry and fluffy rice and cool it.
2. Soak Nuruk for 30 minutes and break it apart.
3. Mix rice, nuruk, yeast and water A
4. ferment it for about 5~6 days
5. Drain it and dilute with water B
6. Refrigerate it for about 3~4 days
7. Have a fun time drinking traditional korean booze
