抹茶雲石吐司
抹茶餡料
材料
抹茶粉 8-10g
栗粉(玉米粉) 20g
糖 15g
無鹽牛油 20g
牛奶 120g
做法：
將栗粉(玉米粉)、抹茶粉過篩放入鍋內
加入糖、無鹽牛油和奶
開小火將抹茶饀煮熟，緊記要邊煮邊攪拌
將抹茶糊放在保鮮紙上，再蓋上一張保鮮紙
把保鮮紙摺成正方形，用木棒壓平填滿四角，放入冰櫃備用
Matcha mixture
Ingredients:
Matcha powder 8-10g
Cornstarch 20g
Sugar 15g
Unsalted butter 20g
Milk 120g
Method:
Sieve cornstarch and matcha powder, then put it in a pot
Add sugar, unsalted butter and milk in it
Turn on to low heat and keep stirring it
Put the matcha mixture on a wrapping paper and cover it with another wrapping paper
Fold it into a square and fill all the gap, then store it in freezer for further use
麵包底
材料：
高筋麵粉 230g
低筋麵粉 50g
酵母 3g
蛋 50g
糖 25g
鹽 2g
牛奶 120g
無鹽牛油 20g
做法：
將所有材料(無鹽牛油除外)放入碗內混合成團
加入無鹽牛油把麵團搓至光滑起筋
滾圓麵團進行第一次發酵
輕拍麵團排氣，滾圓後靜止20分鐘
把麵團壓成長方形，然後放入抹茶餡料
將麵團的四角摺向抹茶餡中央
把麵團壓開成長方形，然後由兩邊向中間摺三份一
靜止十分鐘
重覆以上動作三次
最後一次壓開麵團後，把麵團分成三份織三辮子
造型後放入吐司模作最後發酵
放入己預熱焗爐200'C焗25分鐘
Bread
Ingredients:
Bread flour 230g
Cake flour 50g
Instant yeast 3g
Egg 50g
Sugar 25g
Salt 2g
Milk 120g
Unsalted butter 20g
Method:
Put all the ingredients (except unsalted butter) into a bowl and mix it
Add unsalted butter and knead it smoothly
Shape into ball for first fermentation
Slightly hit the dough to release air, shape into ball again and rest for 20 minutes
Flatten the dough into rectangle, then put in matcha mixture
Fold the dough from the corner to the centre of the matcha mixture
Flatten it into rectangle and fold both size to the centre
Rest it for 10 minutes
Repeat the above action for 3 times
After flatten the dough in the last time, divided it into 3 portions and twisted it
Put it in a loaf tin for second fermentation
Pre-heat the oven into 200'C and bake it for 25 minutes
