Ingredients:
4 egg whites (room temperature)
a pinch of salt
mix until foamy
granulated sugar 1 cup (200g)
corn starch 2 tsp (5g)
lemon juice or white wine vinegar 2 tsp (10ml)
vanilla extract ½ tsp (2.5ml)
For the filling:
mascarpone 9oz (250g)
whipping cream, at least 30% fat, chilled 1 cup (240ml)
powdered sugar 1 tbsp (10g)
vanilla extract 1 tsp (5ml)
strawberries 12oz (340g)
