Fried quesadillas are generally street food. At breakfast or lunchtime, you can find a steaming stand around the corner where the fillings are as diverse as the cook's imagination; chicharrón, chicken in mole sauce, rajas con crema, or squash blossom are all classics. Today's version is inspired by these street recipes, but also by a dish that someone in my family often makes, since marlin is frequently eaten in the city where I grew up, and there are many ways to serve it.
