Frozen Cookie Cheesecake Sandwhich

There is nothing better in the summer time than a good old ice cream sandwich! The crunchy chocolate chip cookie paired with a perfect ice cream sandwich. Two of my favorite things combined!
Ingredients: 1/2 a brick of cream cheese (4oz)2 Tablespoons sugar, 1 Cup Cool Whip Topping, 20 Chips Ahoy Cookies or another brand, 6 oz semi-sweet chocolate.
Directions: To make, beat cream cheese and sugar together until smooth. Blend in cool whip. Scoop about 2 tablespoons of cream cheese mixture onto flat back of one side of the cookie.
Add second cookie and press down firmly. In a microwave safe bowl, melt the chocolate on 30 second intervals to ensure it does not burn. Dip one side of the cookie in the melted chocolate and lay flat on a rack to cool. Chill for 3 hours prior to serving. Enjoy!
