Five super tasty salad recipes for the whole summer: Greek salad, Bulgarian salad (shopska), crispy chicken salad, mixed salad, tomato salad with cheese.
1. Greek salad. For a large portion of salad I use this:
• Two medium tomatoes. I cut the tomatoes into quarters, then slice the quarters and that way I get pieces of the perfect size for the salad. I put them in a deeper bowl where I can mix them later.
• Two small cucumbers, which I don't peel completely, so that the slices come out more beautiful, with colored spots
• Half a red onion, not very large, cut into crescents. Don't forget if raw onion upsets your stomach, you just need to put it in a colander and wash it well under cold running water.
• Half a bell pepper, definitely green.
• 10-15 pitted olives.
• 70 g of creamy feta cheese cubes.
• And a teaspoon of dried oregano.
And that's it. When serving, dress the salad with salt, olive oil and vinegar, to your taste!
2. Bulgarian salad - Shopska
• Two peeled cucumbers
• Two not too large tomatoes
• Half a green bell pepper - you can also put Bulgarian pepper - it looks like a long hot pepper but it is not hot at all
• Half a red onion, not very large, cut into half moons
• A few parsley leaves
• 70 g of grated telemea cheese
Of course, you will then dress the salad with oil, vinegar and a little salt, only if needed.
3. Mixed salad / mixed platter
In a medium-sized platter, place two thin cheese triangles in the middle (approx. 50 g). It can be feta or telemea. Around the edges, arrange like this:
• Baked kapia peppers. At the restaurant, we were served plain baked pepper strips, but I put pepper strips from the salad, meaning it was already in the dressing with oil, vinegar and flavors.
• Small, plain tomato triangles
• A few cucumber slices
• Baked green pepper strips, but this time Bulgarian – the long one that is not spicy. This one was also in the dressing.
• And a few olives
My husband eats it as a side dish for steak. He just puts salt and olive oil over the tomatoes and cucumbers and does not mix the ingredients together.
4. Crispy chicken salad
Crispy chicken salad is very simple. In a large bowl, put a good handful of lettuce leaves or a mix of lettuce leaves in a bag.
I put a small peeled cucumber, a tomato cut into pieces, and two medium pieces of crispy chicken, sliced. I make the crispy chicken according to the same classic schnitzel recipe, only I use the narrower pieces of breast, and instead of normal breadcrumbs I use panko breadcrumbs or corn flakes. That's all. Then the salad is dressed as usual.
5. Tomato and cheese salad.
Tomato and cheese salad is my favorite and obviously doesn't need much explanation: it only contains tomatoes and crumbled cheese on top. I like the combination with old sheep's telemea, but any telemea cheese is very good.
The only thing I want to point out here is how to make tomato salad.
First of all, don't forget the secret I told you about the classic tomato salad. If you want a lot of sauce in your salad, put a grated tomato. For an even more refined salad, you can squeeze the pulp from the grated tomato and add only water. This way, the pieces of vegetables will not have a soggy appearance.
Another aspect I want to discuss is about vinegar. A few years ago, in a very well-known TV commercial, someone had a line like this: "only in the pub do you put vinegar in tomato salad".
Until then, there was no problem with vinegar in tomato salad, since then I have been hearing various comments periodically that it is forbidden to put vinegar in this salad.
Where is the truth? Tomatoes, compared to other vegetables, are acidic. Indeed, such a salad needs less sourness compared to a green salad for example (but not at all).
For a large bowl of salad as you see in the video, a few drops of vinegar are enough. For my taste, a tomato salad will never be complete without these drops of vinegar - I can't call it a salad! If for your taste the natural acidity of tomatoes is enough, and you don't need to use vinegar anymore... that's perfect, don't add it! But in no way can it be said that it is forbidden to use this ingredient in tomato salad.
