Recipe:
Sauté half a block of butter, or however much you have on hand, with flour in a pot until lightly browned. Once it's lightly browned, add milk and stir until thickened. Add salt, pepper, and nutmeg, and adjust the liquid as needed. Add cheese and stir over medium heat.
Add the spaetzle to the pot, sprinkle with cheese if desired, and bake in the oven. Serve with salad and fried onions.
