Victoria Sponge Cake Recipe
Ingredients:
350grams unsalted butter, softened
400grams (2cups) caster sugar
8 large eggs, beaten
450grams (3 1/4cups self-raising flour
4 tsp baking powder
4 tbsp milk
1 tbsp vanilla extract
Instructions:
1. Preheat your oven to 160°C (330°F) and grease and line a 10inch round cake tin.
2. In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.
3. Gradually add the beaten eggs, whisking well between each addition.
4. Sift in the self-raising flour and baking powder and gently fold the mixture together using a spatula until fully combined.
5. Stir in the milk to loosen the mixture slightly.
6. Pour the mixture in the prepared cake tin and smooth the surface with a spatula.
7. Bake in the preheated oven for 40-45 minutes, or until the cake is golden brown and a skewer inserted into the centre comes out clean.
8. Remove the cake from the oven and leave to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely.
9. Once cooled, you can cut the cake in half to add your favourite filling, such as jam and whipped cream or dust the top only with icing sugar for a finishing touch.
