Healthy lentil soup✨
▪️1 Tbsp Olive Oil▪️1 Medium Yellow Onion, diced small▪️3 Medium Carrots, peeled & diced▪️2 Stalks Celery, diced small▪️4 Cloves Garlic, minced▪️2 tsp Cumin▪️1 tsp Dried Turmeric▪️1 tsp Dried Thyme▪️ 1 tsp Kosher Salt▪️1/4 tsp Black Pepper▪️1 Cup Dry Lentils (standard brown lentils)▪️4 Cups Vegetable or Chicken Stock▪️5 oz. Baby Spinach (~6 Cups)▪️1 Lemon, zest & juice▪️Sour Cream, for serving (optional)▪️
🌱Vegan Modification: Leave out the sour cream :)
1️⃣ In a large pot preheated over medium heat, sauté the onions, carrots, celery, and garlic in olive oil until the onions are translucent and the rest of the veggies are starting to become tender (5-6 min)
2️⃣ Add the cumin, turmeric, thyme, salt, and pepper and sauté for 1 more min to bloom the spices
3️⃣ Add the lentils and sauté for 1 min, then add the vegetable stock and bring to a boil over high heat; once the soup starts boiling, cover and simmer on low heat for 35-40 mins until lentils are tender
4️⃣ Turn off the heat and stir in the spinach (it will wilt and turn bright green from the residual heat), lemon juice, and lemon zest
5️⃣ Serve with a dollop of sour cream on top and enjoy!
