Spaghetti alla chitarra is a fresh durum wheat pasta, meant to be thick and square: a delicacy of traditional Italian cuisine from Abruzzo. The "chitarra" is the instrument used to make spaghetti alla chitarra: it's called a chitarra because the metal wires used to cut the pasta make a sound, when pressed, just like those of the instrument from which it takes its name.
