In this episode, we'll be making delicious Christmas bread, from start to finish! Watch as we mix, knead, shape and rise our magical dough before baking it to perfection. Not only will you get to see how to make this classic holiday bread, but you'll also learn about the history and culture of Cyprus, and meet Marilena, the Cyprus Culinary Ambassador!

Marilena Joannides teaches us how to make ”Yennopita” - Christmas Bread
& “Stavrokoulouro”
250g cake flour
250g bread flour
1 teaspoon salt
75g sugar
11g dry yeast
1 Cinamon stick
4 cloves
½ teaspoon anise seeds
¼ teaspoon mastic
250g water

50g sesame seeds
1 teaspoon lemon juice

Boil the sesame seeds in water with the lemon juice for 3’. Drain and dry on a clean cloth.

Grind all spices with a bit of sugar and mix with the flour, salt and remaining sugar.

Dissolve the yeast with the water and leave till frothy. Add to the flour mixture and knead very well till dough is soft.

Shape in a ball, roll in the sesame seeds and slightly press with your hands. Make a “cross” sign sing kitchen scissors or with raisins (typical of Rizokarpaso village).

Cover with a clean cloth and let rise for 1 hour. Bake in a moderate oven till golden brown (about 1 hour).
