Ingredients List and Recipe - see video for detailed instructions
Pie Crust:
2 1/2 cups all-purpose flour (I like King Arthur best)
1 teaspoon salt
6 tablespoons unsalted butter, cut into small chunks and kept in freezer until ready to add
3/4 cup vegetable shortening, chilled
1/2 cup cold water (take from ice water - see video for instructions)

First, try to keep the ingredients COLD. Mix flour, salt, butter, and shortening in a food processor and pulse for a few seconds until crumbly. Dump into a large bowl. Add 1 tablespoon of water at a time and stir with a pastry blender each time. Turn onto lightly floured parchment paper and knead for a few seconds until the dough is smooth. Divide the dough in half. Flatten each half into a round disk. Place each disk in plastic wrap and put in the refrigerator for at least 2 hours or overnight. When ready to use, take the dough out of the refrigerator for about 10 - 20 minutes before rolling. Use a rolling mat and very lightly floured parchment paper and roll dough out to your desired thickness. (I roll my crust out pretty thin.) Watch the video to see how to transfer the dough to the pie plate. Flute or use a fork for the edges. Put in the refrigerator for about 30 minutes (or longer) before baking.
